Ingredients

The Chicken & Marinade

  • 4 boneless chicken thighs

The Roux & Vegetables

  • 1 tbsp olive oil
  • 2 tbsp butter

The Smothering Gravy

  • 2 cups chicken broth
  • 4 sprigs of fresh oregano (or 1 tbsp dried)
  • 3 sprigs of fresh rosemary (or 2 tsp dried)


Instructions

  1. Prepare the Chicken: Place the chicken thighs in a bowl and evenly coat them with the salt, black pepper, thyme, onion powder, and garlic powder. Heat the olive oil in a large skillet over medium-high heat. Sear the chicken thighs until they develop a rich, golden-brown crust on both sides. Remove the chicken from the skillet and set it aside on a plate or in a container.
  2. Create the Roux: Lower the heat to medium and add the butter to the same skillet used for the chicken. Once the butter has melted, sprinkle in the flour. Continuously stir and gently scrape the bottom of the pan to lift up the flavorful browned bits (the fond) left behind from searing the chicken. This ensures maximum flavor absorption. Continue cooking and whisking until the roux is smooth and reaches a light golden-brown color.
  3. Bring It All Together: Once the roux is perfectly smooth, toss in the chopped onions and bell peppers, stirring briefly to coat them in the roux. Gradually pour in the chicken broth, stirring constantly to prevent lumps, until the gravy mixture is consistent and slightly thickened.
  4. Simmer and Serve: Stir the oregano and rosemary into the gravy. Return the seared chicken thighs (along with any juices that have pooled on the plate) back into the skillet. Reduce the heat to low, cover, and let everything simmer gently until the onions and peppers are soft, and the chicken is fully cooked and tender. Serve immediately over a warm bed of rice!
